Grayscale keeps the full range of tones from black to white, just with color removed — this is what most people mean by a "black and white photo." Black & white (high contrast) mode pushes every pixel to pure black or pure white based on a brightness threshold, giving a stark, poster-like look.
Only shown in black & white mode — pixels brighter than the threshold become pure white, everything else becomes pure black. Raising it makes more of the image turn black; lowering it makes more turn white.
